Cut the chicken and veggies about the same size so they cook at the same rate. Add the chicken and vegetables to a mixing bowl.
In a small bowl, whisk together the olive oil and seasonings. Pour over the chicken and vegetables and toss well to coat.
Pour everything into the air fryer basket.
Air fry at 400° for 15-20 minutes until the chicken is cooked through.
Serve alone or over rice.
