Add the softened cream cheese, horseradish, peach jam, and seasonings to a mixing bowl. Using an electric mixer, whip the filling until creamy and smooth.
Spoon the filling in to a piping bag or to a Ziploc bag and cut the corner.
Pipe onto crackers; starting at the small carrot point. Pipe the filling thinly on one side increasing to thick on the other side so it resembles a carrot. Add a parsley leaf on the thick end and serve.
