Grab 2 glasses and add 8-12 ounces of water to each. Then drop in the red food coloring to one glass and blue to the other. Add as much as you’d like for the shade desired.
Then, add 1 teaspoon of white vinegar to each glass and mix. (the vinegar helps the color to be more vibrant. Don't worry! Your finished eggs will not taste like vinegar.)
Peel the eggs from the shell and cut each hard boiled egg in half with a sharp knife. Place the yolks into a mixing bowl. Add a couple of eggs into the red and blue coloring at a time and let sit until desired color is reached, up to 10 minutes. Just pretend you are coloring Easter eggs out of the shell.
You’ll want 8 egg halves to be red, 8 blue and keep 8 white.
Place paper towels out for the eggs to drain.
When the eggs reach your desired shade, remove the eggs from the colored water and place on paper towels and let dry. Once the eggs dry the color will not transfer to your fingers.
Meanwhile, prepare the filling.
Mash the egg yolks in the mixing bowl with a fork. Add in the mayonnaise, mustard, seasonings, and pickle juice. Mix the filling together using an electric hand mixer until smooth.
Spoon the filling into a piping bag fitted with star tip and pipe the filling into each egg.
Refrigerate until ready to serve and refrigerate any leftovers in an airtight container.
