What you need

tsp ground cinnamon
lemon

tbsp unsalted butter

apple

cup dark brown sugar

puff pastry

Instructions
Preheat oven to 400Β°F. Make sure the puff pastry is thawed, but still cold. Combine the diced apples, brown sugar, lemon juice, cinnamon and butter to a saucepan. Cook over medium heat 8-10 minutes until apples are softened. Line a sheetpan with parchment paper. Roll out the puff pastry on a lightly floured surface to 12β width. Cut into 8 rectangles. Add 4 rectangles to the sheet pan and fill with 1-2 tablespoons of the filling. Add the top puff pastry rectangles to each. With a fork seal the edges. Whisk the egg with a splash of water and brush over the pies. With a sharp knife cut slits in the tops of each pie. Bake 20-25 minutes until the tops are golden brown.
